Vegan Vegetable Pasta, no oil, low fat. (Recipe and video)
As an entrepreneur and film producer, I don’t have time everyday to prepare gourmet vegan meals like you see in the cook books. Once a week I might get that luxury, but the other 6 days my meals need to be simple, quick and very nutritious.
I get a lot of requests for recipes and how I eat, here’s one of the meals I make 1-2 times a week. The leftovers also last 2-3 days. It’s easy, delicious and very nutritious.
The most important part of this recipe is that there’s no oil added and it’s very low in fat. The foods I eat are not just for overall health, but to also prevent and reverse heart disease. That’s why no oil and low fat is so important and that means NO OIL!
Engine 2 products are great and specifically created for those suffering from heart disease and want to reverse their heart disease. They’re also great for people that want to prevent heart disease. I like buying their sauce not only because it’s tasty and healthy but also because of the convenience. You can make your own sauce, but please, no oil.
2 yellow and green zucchinis
Sweet grape tomatoes
Engine 2 pasta sauce
Pasta (Whole grain, whole wheat, brown rice pasta, or quinoa pasta)
2 tbsp of raw turbinado sugar (optional. I like a sweeter sauce)
Preheat oven to 350 degrees F (175 degrees C).
Dice up zucchini, put into a bowl with a little water and season with garlic powder, onion powder, and sea salt. Put parchment paper on a cookie pan and evenly spread diced up zucchini. Let cook for 20 minutes.
Pour sauce into saucer and put on low. Once the zucchini is ready, add the zucchini, spinach and grape tomatoes to the sauce and bring to a low simmer. Add 2 tbsp of sugar, season as needed. Let simmer for 20 mins.
Boil water and cook the pasta. If you time this right, the sauce will be done just as the pasta is finished boiling.
Serve on a plate with a nice glass of red wine.
If you’re 100% Plant Based low fat, you don’t need to worry about eating healthy complex carbs. Carbs are not your enemy, to much fat and processed foods are. As a low fat, Plant Based Vegan, you can eat in abundance and I promise you’ll never feel full, bloated or tired after you eat.
